Banana Cookies

My toddler loves to help in the kitchen.  With her dietary restrictions, it is hard for her to find snacks or desserts that she can have when she goes to places that serve homemade food.  As a result, I have found recipes that I know she will enjoy without having to worry about harmful ingredients.  One of our favorite go-to dessert/snack foods is banana cookies! Not only are they nutritious and simple to make, but also inexpensive!

Do you have bananas that are about to go bad?  Ripe bananas work best for these yummy cookies.  The only two ingredients you need to create these cookies are bananas and oats.  That is the base of the cookie.

The first step is to peel and mash the bananas.  My toddler loves to do this part.  One day while I was nursing my son, my daughter decided to make banana cookies on her own. Next thing I know, she had a bowl of peeled bananas and was mashing them with her bare hands. πŸ˜‰  Lets just say, I hope the oven zapped any bacteria from her non-washed hands!

After the bananas are peeled and mashed into a creamy consistency, mix in the oats.  You can use any form of oats.  The bananas are the only “liquid” part of the cookie that is needed to form the cookie together.  No eggs or dairy needed!

After the base is made, you can add whatever mix-ins your little heart desires!Β  My toddler enjoys throwing in the mix-ins like raisins.Β  We also usually add peanut butter for added protein.Β  You can also add peanut butter to the mashed bananas before adding the oats as it mixes easier.Β  Ground flax seed or chia seeds are great to add for extra nutrition as well.Β  For the chocolate lovers out there–me!–add chocolate chips; dark chocolate is great for antioxidant benefits.Β  Add spices like cinnamon or nutmeg with raisins for a Fall treat.Β  Furthermore, add vanilla to enhance flavor.

It usually depends on the size of the bananas on how many cookies you will end up with. For the recipe posted below, 3-4 medium bananas will make on average about 12-16 cookies. Six medium bananas make 28-30 cookies.  The oat amount may need to be adjusted based on the amount/size of bananas that are used.  The mashed bananas should be evenly mixed with the oats so that they easily form into a cookie consistency. Too many oats will cause the cookies to be dry and crumbly.

This recipe can be baked in two different forms–cookies or bars.  To make cookies, drop by rounded tablespoons onto a prepared cookie sheet about one inch apart. For easy clean up, use these silicone non-toxic baking mats from Amazon (pictured below)!  To make into bars, evenly distribute the batter into a greased 8×8 or 9×9 glass baking dish and bake just like the cookies.  If doing 6+ banana recipe, use a 9×13 baking dish.  The cookies are done when they are lightly golden brown.

Once you bake the cookies, serve them warm.  For storage, I recommend storing them in a tight container in the refrigerator.  The cookies can sit out but they may condensate more quickly and form a wet outer layer.  They tend to last longer when stored in the refrigerator. We like to eat them for snack or for breakfast. The cookies also make a delicious dessert to satisfy your sweet tooth! ENJOY!

Banana Cookies

Ingredients
  

  • 3-4 medium bananas, ripe and peeled
  • 2 cups oats
  • 2 tbsp peanut butter optional
  • 1 tbsp honey optional
  • Any Mix-ins: nuts, raisins, chocolate chips, flax seed, chia seeds, etc optional

Instructions
 

  • Preheat oven to 350Β°F.
    2. In a medium size bowl, mash bananas until smooth.
    3. Mix in oats until well combined.
    4. Add in any options you want. Mix into banana/oat batter.
    5. Spoon tablespoon amounts of batter to a prepared cookie sheet.
    6. Bake at 350Β°F for 8-10 min until lightly golden brown.
    7. Store in a tight container in the fridge for longer storage.

Notes

*If you add peanut butter, you can add it to the mashed bananas before adding the oats.Β 
*For added flavor, you can add 1/2tsp vanilla
*To make bars instead of round cookies, pour batter into greased baking dish and bake the same until golden brown.
