Healthy Peanut Butter Pie

Ingredients
  

Crust

  • 1 cup graham crackers, crushed
  • 2 tbsp butter, melted
  • 1 tbsp honey

Filling

  • 2 cups greek yogurt, plain
  • 1 cup peanut butter natural, no sugar added
  • 2 tbsp honey
  • 1/2 tsp pure vanilla
  • chocolate chips optional
  • peanuts optional

Instructions
 

  • To make the crust, mix the crushed graham crackers, butter, and honey.  Spread the mixture evenly in a pie pan.
    2. To create the filling, mix all filling ingredients together-- Greek yogurt, peanut butter, honey and vanilla--until well combined.
    3. Spread the filling over the crust.  Top with chocolate chips and/or peanuts.
    4. Chill and store in the fridge.  Best if eaten within a few days.

Notes

After mixing the batter, taste test and adjust as needed.  If the taste is too bitter for you, add extra honey until desired sweetness.
